Banana Chocolate Cupcakes


It was quite a long time I'm not publishing cupcakes, so today I come with these which I use to make quite a lot and few weeks ago I enjoyed with some friends for the afternoon tea. These banana cupcakes with chocolate sponge are simply great. After the coconut recipe those are one of my favorites and one I use to make the most, so if you like banana and chocolate do not doubt and try them.

Banana Chocolate Cupcakes makes 6
60 g butter at room temperature
90 g white sugar
90 g all purpose flour
15 g dutch processed cocoa powder
1/2 teaspoon vanilla extract
1 teaspoon baking powder
1 large egg
60 ml whole milk
1 medium ripe banana

Mash the banana with a fork and set aside. Sift the flour, the cocoa and the baking powder. Cream the butter and the sugar until fluffy and smooth, add the egg and the vanilla and beat until well combined. Add the sifted ingredients alterning with the milk, and beat on a low speed just until incorporated, do not overbeat. Finally add the banana and fold with an spatula.

Divide the mixture between the cupcakes cases. Bake 20 minutes or until a skewer inserted in the middle comes out dry. Remove from the oven, let them in the tin for 5 minutes and finally let them cool completely in a wire rack before decorating.

For the frosting:
170 g icing sugar
1 tablespoon whole milk
50 g butter at room temperature
4 slices of a ripe banana

Blend the banana. Cream the sugar with the butter, add the milk and the banana and beat until fluffy and smooth. Decorate the cupcakes with a thick pipe.
