Chocolate Truffles

This recipe is so easy to make and it taste delicious! today I show you something quick but only for puur chocolate lovers: Truffles!

It is very importat to use a good quality chocolate, since the taste would change completly if you use a non appropiate chocolate. It must have a high cocoa percentatge. I use Lindt Dessert 70% of cocoa, but of course there are other such as Nestle, even better but more expensive as Valrhona.

I love them with a little bit of brandy, or also posible add other liqueur, but is up to you and your preferences.

I used puur cocoa powder, but is also posible use chocolate sprinkels or even color sprinkels if you want to make them more funny.

You just need to prepare the mixture few hours or a day before, since it is necessary place the mixture in the frisge, otherwise would be not posible shape the truffles.

INGREDIENTS makes about 20

150 g chocolate, chopped fine
140 g heavy cream
1 teaspoon brandy
Cocoa powder

Preparation:

1. Chop the chocolate in a bowl.

2. Place the heavy cream in a small saucepan and romove from heat just when starts first bubbles at the sides, revome from the heat and pour the mixture over the chopped chocolate.

3. Stir gentely with a wooden spoon, make sure all chocolate is melted. Add the brandy and stir until mixture is smooth and creamy.

4. Let it cool down in room temperature, cover with plastic warp and place in the fridge, better do it the day before.

5. After cooling shape into balls by using two spoons. Also posible by rolling between the palms of your hands, but chocolate melts much quicker. Place each truffle in a plate with cocoa powder or chocolate sprinkels and roll around until coated.

If during the rolling process chocolate melts place the bowl into the fridge for few minutes.

To serve put to cool in the fridge for at least 10 minutes or store in a adapted container in the freezer, and take them out 15 minutes before serving.

If you wish a less puur cocoa taste or truffles are for children, use a proportionate part of white chocolate, and of course without the brandy!

I just love them
